The Farmer Cider-Maker in North and Central Somerset
Description
A thesis concerned with those Somerset cider-makers who combine cider-making with farming activities. The core of the study is the description of processes and equipment based on fieldwork carried out between January and September 1965. This is complemented by an examination of the craft's history, the economic factors that influence the production of cider, an outline of the principles of cider-making and a description of the Street wassailing ceremony. An appendix containing cider apple prices for the period 1930-1953, and a glossary of terms connected with cider-making, are included. Photographs and drawings of the cider-making process and related equipment (scoops, presses, storage barrels) are included.
