Description
A study of cheese-making in Cheshire, comprising chapters on cheese and English cheese-making (general introduction), cheese-making in Cheshire, folklore connected with cheese-making, Cheshire cheese-making in the early twentieth century, modern farmhouse Cheshire cheese, creamery methods and their effect on farm house production, marketing systems (traditional and present-day) and Blue Cheshire. Photographs showing the stages in the production of farmhouse cheese are included within the thesis.
