Sussex Recipes

Description

A study of Sussex recipes, based on both printed sources and interviews with local people. The introductory section provides some historical background, descriptions of utensils, an ice house and a bakery, recipes associated with Sussex towns and customs, copies of pages from old Sussex culinary books, two authors' classification of the delicacies of Sussex and dialect terms for Sussex food. The next section records information given to the collector by a number of Sussex informants, followed by sections on fish, meat, sweet, cheese and apples, preserves, liquor, and a final section including traditional cures and their recipes, plantlore and perfume recipes. The sections relating to particular foods include photocopies of recipes and articles taken from books and journals. An Appendix comprises photostat copies of a collection of typescript recipes sent to one of the collector's informants, Lady M. K. Samuelson, by Edward Shoosmith of Halland. This collection was to help her with her 'Sussex Recipe Book', published in 1937.
