Questions relate to beef, lamb, pork and poultry, and the answers include the names given to animals of differing ages, meat cut terms, terminology for slaughtering and slaughtering methods, the contamination of meat and the types of pest, the processing and preparation of carcasses, meat storage and preservation, meat processing equipment/implements, offal, blood products and other meat by-products, meat display, butcher's shop fixtures and fittings, butchers' clothing, names for other people associated with the meat trade (e.g. inspectors), terms for cutting/processing meat, back slang (meat names, prices). The collector refers to numbered diagrams, to elicit answers concerning meat cut terms. 18 of 24.
