[Tr. 1] Brian Hartshorne, recorded at home in Wolverhampton; gives answers to the collector's questionnaire concerning language and terminology associated with the butchering trade. Questions relate to beef, lamb, pork and poultry, and the answers include the names given to animals of differing ages, meat cut terms, terminology for slaughtering and slaughtering methods. [Tr. 1].
