Description

John Whittall [recorded in a butcher's shop in Shrewsbury] gives answers to the collector's questionnaire concerning language and terminology associated with the butchering trade. Questions relate to beef, lamb, pork and poultry, and the answers include the names given to animals of differing ages, meat cut terms, terminology for slaughtering and slaughtering methods, the contamination of meat and the types of pest, the processing and preparation of carcasses, meat storage and preservation, meat processing equipment/implements, blood products and other meat by-products, meat display, butcher's shop fixtures and fittings, clothing, the health inspector, food inspector (during World War Two), names for butchers and their staff, and for people in meat trade-related occupations, meat cut terms, pricing, serving, cleaning, butchers' slang. The collector refers to numbered diagrams, to elicit answers concerning meat cut terms. 16 of 24.
