[Side 1] James talks about sheep farming incl. rearing of orphan lambs, reflects on importance of experience for shepherds, discusses own sheep farm in past (flock of 500 over 200 acres), describes prowess of current village shepherd, discusses process of 'spaning' [= weaning] sheep for market. [Side 2] James talks about own farm (flock of 500 sheep and herd of 100 'beast' [= cattle]), talks about making cheese (Wensleydale), explains cheese frequently sold in London, describes in detail traditional farmhouse production of making Wensleydale, describes cheese vat on wheels (c. 170 gallons), explains process of constantly adding new milk, removing and sieving cream, heating and returning cream to vat, adding rennet tablets etc. Note: Recording date 1962-11 noted on LAVC documentation, 1963-03-04 written on lacquer disc label.
