[Side 1] Mrs. Caine talks about greater importance of Christmas Eve in past, describes New Year celebrations and tradition of first-footing, discusses dairy and use of milk to make butter. [Side 2] Mrs. Caine talks about giving skimmed milk to pigs and hens to improve flavour of eggs, describes process of making cheese and 'junket' [= cream cheese], 'sile' [= strain] milk into 'pancheon' [= bowl] and add rennet to set, squeeze in cheese press to remove 'quey' [= whey] and dry on rack.
