Buttermaking: Washing Out Buttermilk

Description

Mrs. M. E. Scott washing buttermilk out of butter, in her home, West Stonesdale ( Swaledale). The butter has been lifted out of the churn (using hands) and into a wooden butter bowl, where it is gently squeezed against the sides to wash out all the buttermilk. The presence of buttermilk in butter reduces its keeping quality. In this photograph, Mrs. Scott is tipping up the butter bowl in order for the squeezed-out buttermilk to run off.
